During his fight with Gaara, he showed exceptional speed, on par with Lee. After the Chuunin exams however it all disappeared? How could that of happened?

Since it was a simple copy of Lee's movements it probably tired Sasuke since he didn't train as much as Lee did.
That most probably why he avoids it.

That's not true. Naruto didn't receive any speed training. Lee was clearly the fastest genin and Sasuke matched that speed within a month, then it disappears .
