I feel like Sasuke is running away from all of his problems which really ruins his character. Also we dont know if he cares about his family because even his own wife doesnt know anything about him after being married to him at least for 5-10 years. Sasuke might as well just claim responsibility and accept that he has become a father for a fodder family.

Yeah, sorta, but Sakura is the living proof that he cares about them. If he didn't care, he wouldn't allow Sakura and maybe Sarada wear the Uchiha crest everywhere. Its in their house and in their clothes. All people from Konoha know that they are Uchiha.
