One thing I don't get? If Kishi really did not want to extend the series. Than why did he make a part 3?

He does want to extend it. That's why there's a short part 3 (people are speculating that it won't even last a year) and a series of upcoming movies. Plus novels.

But he doesn't want to use Sasuke or elaborate on his story any longer, he's using the new generation for the plot.

And yeah someone linked that earlier in the thread. But if that's all, then what "bigger things" and applications of whatever it is Naruto showed him could he have been talking about?

Naruto just showed him that peace through understanding is possible. Sasuke just made it clear that he wants to travel the world and see how that peace is affecting it. While Kishimoto stated his main purpose is just to learn about Kaguya.
