I felt Sasuke is constantly being discredited by this fight in general and felt the need to show the highlights of what he did in this fight

Sure, Sasuke was very powerful at the time. But still, Itachi
in many ways held back. Black Zetsu even noted some of the blows
Itachi took he normally never would've, and I think it's not just his vision,
but that he purposefully got hit. Furthermore, several times when he put
Sasuke under genjutsu, he could've ended him right there. Or he could've
put Sasuke out of comission wish susanoo. Nevertheless, Sasuke technically still
won the fight, and he did kill Itachi.

The only reason it was hard for Itachi, because of how he got hit hard with AIDS, other than that, it would have been easier for him to get Orochimaru out.

Sasuke didn't force him to do anything. The only things that possibly really surprised Itachi were the rigged shuriken, and Kirin.

Itachi planned to exhaust himself to death, and Sasuke to the point that Orochimaru would come out so that he can seal Oro.
