how can Obito use Tsukuyomi reflected towards the moon (Infinite Tsukuyomi)... to meet Rin again and trap everyone in a alternate universe where there is "peace" and such? this made me believe that they could do anything in the Tsukuyomi...

As we saw earlier Infinite tsukuyomi needs juubi's eyes to perform Tsukuyomi, so Obito can't cast Infinite Tsukuyomi without Juubi,and since being a Juubi Jin, he can use Yin-Yang techniques to create things in Tsukuyomi, Itachi can't..
And even if he can, there is absolutely no way he can hold it for that much amount of time, due to chakra reserve limitation.
