Because the human body is built up from cells. The poison attacks the human body ( or in other words the cells ). Tsunade's regeneration is CELLULAR level, this means the Byakugou would simply replace the poisoned cells with new, healthy ones.

Even if Tsunade's Byakugou could heal her cells, she still could not cure the poison. The Poison stays active for days without stopping, slowly killing the person that was poisoned.

So assuming she could heal from it, her cells would still be rapidly degenerating while regenerating and eventually her chakra would run out.

If a poison which spreads so fast across the body actually destroyed the cells instead of just paralyzing them, it would not take the victim three days to die. Sasori was a puppet master, which frequently changed his opponents into Human Puppets, he would not risk destroying their bodies with some acidic type of poison, his choice of art style revolves around preserving.

The Byakugo multiplies the already existing cells to replace those who have been removed from the body [For example, after the user has been pierced], it doesn't have the ability to heal the damaged cells, nor does it grant her the ability to negate the effects of the poison. There is nothing which points to the Byakugo being able to help her here, aside from allowing her to regenerate the wound that was created when she got poisoned in the first place, at which point it'll be too late.​

Nut sure whether you're being serious or not right now, Tim. In any case, death is not always required for a defeat, and once Tsunade is hit, even if she was to remain alive [Which would not be the case anyways], the fight is lost.​
