Elaborate, poison isn't working no bloodstream, I don't see how he's going to catch him that Mayfly though.

IS grinds him into dust, its a rather good attack to deal with Oro's healing and durability

I think you are confusing iron sand with jinton. Iron sand isn't turning a regular human into dust, let alone Orochimaru who is far more durable.

I'd go with Sasori mid-high difficulty.

With Manda on his side, Orochimaru takes this mid difficulty.. He doesn't need Edo Tensei to win.

Sasori will lose hiruko during the ordeal which would make the fight a mid diff win for him

oro wins mid-high diff.He was confident enough that he could kill sasori in his weakend body with no arms and when his body was rejecting him.The moment orochim summons manda the fight is ending.The only way sasori can hurt manda is iron sand which is pretty slow(even sakura dodget it) and besides manda is fast enough to evade the attack.Hydra isn't needed for this fight.The puppets are deal whith oro's wind release.

Great point. Oro is a planner and thinker - he would have calculated the risk. If he was confident that he could kill Sasori with no arms, then imagine what Oro can do with his arms, available jutsu and the zetsu body / cells...

At first I thought Oro bc he is immune to poison I believe? But now that I think of it, I think Sasori takes this high diff. I can't see Oro busting Hiruki easily or defending Iron Sand that well. Eh, it can go either way for me
