With all due respect Itachi was LEAGUES above Sarada. He was in the anbu when he was as old as Sarada.
Meanwhile Orochimaru was probably beneath Mitsuki when he was as old as him.
With all due respect if we go by the anime then the curriculum is quite advanced from the previous generations time. In other words the standards for graduating are far higher.
Orochimaru was a once in a decade genius I accept Mitsuki would be greater than he was due to sage mode however IQ wise not even close.
Itachi is a once in a century genius (novel). Itachi being in the Anbu was for a specific purpose and judging by the current manga and anime it's unknown if the Anbu still exist. We can't really have a fair comparison between the two but if we say she's lesser than Itachi at the moment.
Lesser than Itachi (once in a century genius) = Sarada.
Greater than Orochimaru(once in a decade genius) = Orochimaru.
You could argue they'd be pretty even.
Sarada's use of the 1 tomoe Sharingan, and other skills put her leagues above others. I expect Mitsuki to have some resistance to genjutsu but Sarada's the daughter of the sage of 6 paths so her sharingan prowess would be extremely high.
