Scrolls are for clans with Secret arts such as Nara, Uzamaki, and Senju clan.
Uchiha's pass their teaching through the stone tablet or sometimes using ocular instinct.

The only tablet is Hagoromo's, they possess tho.

Uchiha have a knack for growing long hair. She can get it from Tentens weapon shop

The hair is not really my issue. It is more so that facial shape and body structure that I don't want to see on her. She looks too hard and different in that picture. To be honest, I like her current appearance, and I would like her older self to look more or less how she does now, but a little taller (kind of like how Sakura didn't change so much in appearance from part 1 to part 2).

Anyway, if Tenten's shop has a gumbai, then by all means, I'm fine with Sarada getting one.

Actually Sakura face had a drastic change from part 1 to current she just only had pink hair and green eyes. Sarada was obviously based on Sasuke in this picture
