Honestly, this episode pretty much confirm that the anime or at least this arc is filler.

It has little to do with the 1 tomoe sharingan, she also have perfect chakra control at this young age, Sarada is far above genin and chunnin, her punch is one of the most complex jutsu to do, her copying those elemental jutsu is child's play.
Sakura could perform jutsu on her first try , the sharingan just makes the mechanic known to her.

On Kakashi. We actually can’t confirm that. When Obito gave him his Sharingan it was only 1T and we never got to see Kakashi Copy any of those 100 Jutsu so we can’t be certain on that.

However I can give you the 2nd point. It probably would have been better to go that route. But like Boruto’s mutation in his Byakugan, SP is probably going to add some new things to 2T and 3T. I’m not thinking Susanoo or Amateratsu but something in line with her genjutsu affinity. But your point is a valid one nonetheless.

Anyways, I'm not one to give a damn about inconsistencies if they are not TOO outlandish, which 1T copying techniques and using genjutsu really isn't when we were never told about the powers of each Tomoe, just as we were never told that the Byakugan needs training to unlock in episode 8. Best just to go with what is currently being told.

I mean, let's all please remember how Kishimoto had Hiruzen call Yamato "Yamato" despite him being called "Tenzo" when he was alive. Hiruzen eavesdropping from the next world or something? Or what about Hashirama comparing Sakura to a 6-year old Tsunade? Or even Sakura saying she has no Chakra left when Naruto is dying but somehow having enough Chakra to open Kaguya's holes 5 minutes later? Neji not using Rotation to stop the spikes?

Don't even get me started on Obito using Kamui with 3T or all the times Byakugan's eyesight abilities are ignored.

If something doesn't make sense it doesn't necaserily mean it's filler fro instance Obito coming back from death to give kakshi DMS and Madara susano without eyes. this arc can still be canon . HOWEVER in my opinion it makes sense for everything sarada did in this episode haers gonn hate
