He doesn't want to fight with his hands because they are the most important tools of a chef. He can wash off the dirt but he is afraid to break them.

He used knifes here because they were fighting in a kitchen and the enemy was using food as a weapon. So according to Sanji's code it was allowed to use kitchen knifes and his hands, because he was "cooking" instead of fighting.

If only Zoro could see this moment.
