Itachi only have Tsykuyomi though. He isn't on Sakura's level in Genjutsu resistance. She wouldn't have have fell for Tayuya.
And to be frank Itachi have fancy powers to hide behind, Sakura has strength and regeneration (that can tank TSB)

Sakura can detect when someone is try to cast genjutsu on her before she is actually caught in it.

As Sakura has faster reaction feat than kunerai so if Itachi tries that he gets punched. The genjutsu needs to be of the highest calliber to affect Sakura.
