Taking a direct hit from Sakura even without releasing the seal is still life threatening. With Shino dead, she can use Katsuyu's acid as means of dealing with the bugs; assuming they would remain attacking her without receiving any further commands from Shino.

But I don't know, really depends on whether he can avoid Sakura blitzing him from the start.

My God... You just love to argue. Do you know how large Katsuyu is? The bugs swarming around Sakura will be dispersed upon Katsuyu being summoned. From there, Katsuyu can envelope Sakura, then spit acid everywhere. Or split into a couple of Mini Katsuyu's (still very large) and spit acid from different angles.
