Hinata would have more than enough chakra to pull it off...

Hinata can see through the dust so she will know if Sakura is about to come for a sneak attack or not and she is better at Taijutau, but Sakura is good at evading. Hinata cannot even balance herself while using the Gengle fist 64 palms. Sakura's Shanoro that she used on the Juubi fodder clones would definitely destroy her as she can't even use rotation and the large explosive radius would prove trouble for her.

Without Katsuyu she wins with medium difficulty but with it she wins low difference. Katsuyu is not even used offensively but for spitting acid so it is pretty useless but it can still be used as an aid for Sakura while Sakura continues to smash the ground and throw off Hinata's balance.

Hinata's only hope would be to continuously shoot air palms from afar at her or engage in a straight up taijutsu battle and outbest her, but I don't see Hinata getting close to Sakura with such wide range explosive punches.

The ranged of Sakura's punch is circa 105 meters in each directions. Hinata isn't dodging shit.

Going with your logic a body won't withstand that either, and that never happened in the manga... Besides, Katsuyu has shown feats that proves she can channel chakra. Sakura and Tsunade use medical ninjutsu through Katsuyu, providing their chakra to the slug.
What makes you think pumping them with chakra is the key to kill Katsuyu given that the only way that Katsuyu was harmed in the manga was when the God Tree drained the little slugs to death.

And why wouldn't it work? Gentle fist affects the inner body, which Kakashi has said cannot be trained, so all feats of gentle fist are equally applicable to any opponent, since gentle fist can't be Tanked.

it took Neji mere seconds to explode kidomaru's spider .... The time to do to katsuyu wouldn't be much long either .... A few seconds at best.

You are comparing this great summon with a regular-big spider that can create webs and sh*t mini spiders.
