OT: Being on her own to fight an Akatsuki member i'm sure she would activate her Byakugo right off the bat. This negates any damage done to her if Hidan manages to get her blood. To incapacite him she can use a chakra scalpel to cut his head off. And to reach him she can play dead after he thinks she's mortally wounded.
The only thing keeping her from definetly winning this is her underwhelming stats and lack of feats to properly evaluate her skill in terms of taijutsu and speed, but if we take into account the way she's being portrayed (>/= Tsunade), then she's the one winning.
I'd say it can go both ways based on how each person sees both characters (imo she does win regardeless).

I highly doubt she would start the fight using Byakugo (or however the hell you spell it) thatd be like Gai going eighth gate as soon as he saw Kisame (._.). Another thing is that she would have no intel on that he was immortal so why would she aim straight for his head? Hidan has been shown to far more nimble than Sakura such as when he was able to successfully dodge Shikamaru's shadow stitching while taking the fight to Asuma not to mention he was able to keep Kakashi on the defensive during their fight. He wasn't keeping Kakashi at bay alone though. They had a plan for him, and that involved Shikamaru, not Kakashi. He never went for the offensive or tried to incapacitate Hidan.
He's nimble and wild, i agree, but he's also vulnerable when he thinks he's done with his ritual. See my argument above.

Well, Hidan is not the type to finish off his opponents; against Asuma he started by stabbing his leg. If he does the same here, she can activate her jutsu while he's toying, play dead during that time (when he decides to finish her off) and then counterattack.
