I think Sakura's points in Genjutsu were meant to measure her skills in Genjutsu breaking, as she did in part one, so that skill is irrelevant in a fight against Hinata.
However, Speed is one of the most important factors in a Taijutsu fight, maybe Hinata could read her moves but that is meaningless if she cannot respond in accurate timing. For the record, Hinata didn't evade any of the wooden arrows, she reflected them with her Air Palm Jutsu, she did try to protect Naruto from some of them though...
Sakura is not only faster, but smarter than her, so she can also analyse her moves, and develop a strategy to defeat her considering the weak points in her style (Spoiler 1), remember she only needs to land one single blow, while Hinata has to land 64 hits to burn all the oponent's chakra...
I disagree with the speed aspect. Once you get close range it is far more about technique than speed. Just look at old man Hiruzen. He had poor speed, I think a three in the databooks. Maybe 3.5, but his Taijutsu was a five. He was capable of fending off Tobirama and Hashirama. While not in the prime state, they were easily on the level of at least S-Class levels. If speed also reflected the aspect of Taijutsu speed, there's no reason for Sakura to be lower in Taijutsu as she'd have faster hand movements: thus overall more efficient Taijutsu skills. Taijutsu measures skill in the martial arts which requires attentiveness, reaction time, and hand-eye coordination. Also, Neji vs Lee. Lee is far faster than Neji, but Neji always wins. It comes down to CQB, it is Taijutsu. If it was more based on speed, Lee should always win.
Hinata did dodge spikes. She couldn't air palm every single spike, or else she'd practically be motionless. Considering the rain was enough to even threaten Neji even with his better Kaiten. If Hinata could use air palm the entire time, Neji wouldn't be dead :l.
Also, Hinata doesn't have to block every point. She only has to hit off her tenketsu in the hands. That was a major point in Neji vs Hinata.
Neji had already cut of circulation in the hands making Jyuuken impossible. Which made the near graze to Neji which was originally what seemed like a victory moment actually just proof of how strong Neji was. Hinata had lost and didn't know it. The same application would apply here.

Additionally, reading Hinata's attacks has to come from reading her style. Meaning she has to play it close or else she can't formulate an attack pattern based on her speed and reactions. Which means she has to hope her hands aren't plugged up before she gets a strategy. Considering Hinata can use the 64 palms, Taijutsu encounters are useless. Also factor in the unknown power of Soshiken.
With Sasori she got to have time just watching while being controlled. Though yes with time she could do so while evading... She still had Chiyo watching her back, but also Sasori inputs commands before commands act. Meaning she has a split second to read before attacks come due to the idea of puppetry. Does this mean she can't eventually due the same with Hinata: of course not. However with Hinata it comes from directly exposing herself to Jyuuken. And naturally who's to say Hinata, who has visual sight on chakra, superior movement analysis, and even down to muscular movement with the Byakugan, doesn't do the same thing.
Just because she's smarter doesn't mean she is the only one to develop a strategy much less her strategy will guarantee victory.

1. Well Tsunade herself doesn't have a lot of jutsu... Really Sakura's lack of jutsu is instead replaced by a series of knowing how to best heal different injuries. I mean medical ninjas aren't just a magic green aura auto healing unit... They do medical procedures.

First, it lowers your weight if only by a little.
Second, it reduces your "hit box". Greater cleavage makes you easier to hit from the side than having a lacking of cleavage.
Third, her breasts won't be as sore.... Moving around a lot would cause a bit of soreness

1) Your analysis about Hiruzen's and Lee's speed would be valid if my only point of the main heroine wining this was Sakura's speed, and it isn't. I said both speed and Intelligence.
Sakura has feats backed up by both manga and databooks (Level 4) in deceiving, analyzing enemies, making up strategies against her opponents, even her enemies stated this. While Hinata doesn't, or at least, neither databooks nor feats state she can. (Spoiler 1)
So she is not only faster, she has the skill to analyse her enemy, find their weaknesses and exploit them. Spoiler 1

Yes, Hinata has Byakugan, her eyes are better in terms of movement analysis, but not at the time of making up strategies, Sakura is smarter, and faster, the odds are on her favor at the time of creating ways of fighting her targets.
2) Hinata didn't evade any of the arrows, she reflected them with Hakke Kusho, your are just making up stories, you cannot assume that without a manga proof that back it up, I don't consider that argument valid, sorry.
For the record, Hinata's and Neji's Hakke Kusho wasn't fast enough to counter the attack that killed Neji, that was stated by Hiashi, or whatever is called Hinata's Father.

She can use Air palm as long as she has chakra... (the entire time), but it takes some time to perfom it.
And also you have to remember, Hinata is not Neji. She has been always inferior in every single aspect as a Shinobi, so you shouldn't compare them. The most recent proves of this are not only her mastering 64 palms at 16 years old, while her cousin did it at 13 or less, but her not being of using Kaiten yet, i mean come on!! I know Neji is a genius but come on!!
3) Part 1 Neji underestimated his opponent, he cancelled Byakugan while approaching to the bunshin lying in the ground, if he hadn't he would have fallen into that...
4) You assume Hinata will be able to get close enough to seal her hands, while Sakura can create large shock-waves in the ground which can:
Prevent anyone from standing in that range of the shock-wave, creating a distance between her and the target.
It depends on how close the enemy is the damage it would cause. At mid-close range it becomes deadly...

First of all, those stats DO NOT count kekkei genkai. Hinata would be MUCH BETTER in taijutsu, ninjutsu, and speed if it counted kekkei genkai.
Secondly, Sakura's intelligence is only high because shes a medical ninja. Shes smart when it comes to medicine, not during a battle.
Thirdly, when her byakugan is activated, it is impossible for Sakura to land a punch on her. Hinata can see where her chakra builds up and will instantly know her next move. For example, she'll know if she's about to do a chakra based punch.
She also has 360 degree field of vision and can see 10 KM away. How exactly would Sakura be able to sneak up on her?
Sakura CANT punch Hinata without being in range of her 8 trigrams, and you already know (from neji's fight with Kidomari) that once you are in range, it's impossible to escape. Plus, 64 palms takes alittle over one second to do.
Also, dont forget Hinata's new jutsu, Twin lion fists, which can instantly drain chakra without using 64 palms.
