Sakura is a medical ninja, she specializes in evasion, meaning she is not slow, at all.
She is also a genjutsu type with high chakra control, non Sharingan genjutsu wouldn't be as efficient.
Fire Style can be healed.

Like I said, 2 Tomoe is more than enoughto beat Sakura, but not having a Sharingan would make Itachi lose.
