Sasuke is 1 out of almost a dozen CM users that could fly. And to get CM 2 you have to die. Which isn't possible without Orochimaru.

So you're assuming this is achieved without guidance? If so Sage mode has about a .5% chance of success, while Curse mode has a 10% chance. So even there, you're wrong.

Could I choose Sage Transformation?

Sage Mode requires the user to have a surplus of chakra and takes a long time to learn, if it's within your ability to learn it. Naruto learned it in such a short amount of time because he's Ashura, and also used Shadow Clones to "cheat." Then it's a little tricky to use in battle unless you have any stalling tactics or teammates, and only lasts 5 minutes at a time.

That said, it's overall power eclipses Sage Transformation, however the boosts provided by Sage Transformation isn't anything to snub your nose at and the omnimorphic abilities adds a great deal of variety. The only downside is the rage, but I have learned to control my rage a long time ago.

Naruto took a good 30 seconds just to gather Senjutsu before the war. And he's mastered it by plot. Even the Genius minato could never sustain it, and Jiraiya couldn't even balance his chakra himself after decades of use.

And how about wings? Did you forget Sasuke could fly...?

Jiraiya could balance it himself, it just wasn't a perfect balance so he didn't get a perfect form.
