If Lee would tear apart Hidan's body, (eg. decapitation) then he could immobilize Hidan, but that's not his style.. so Hidan weans easily, but only after a long time.

Killing someone isn't the only option to win a battle all Lee needs to do is ensure to break Hidans Bones.
Also look at how Hidans Ritual works.
He needs Lees blood then draw the symbol on the floor.

Lee is horrendously agile and fast so it'll be majorly difficult for Hidan to gather the blood.
In addition it doesn't make sense that Lee just lets Hidan draw a symbol on the Floor without disturbance.

Hidan low difficulty. Hidan can get Lee's blood and proceed to do the ritual. Taijutsu does not work on Hidan. Even with gates, Hidan wins with mid difficulty. This dude is very underrated.

Lee is no where near as smart as Shikamaru or even Asuma.
