PS: Get the stock > Duplicate it > Apply the B&W Adjustment (

) > Click the top layer again and erase the parts that you want colored. (There's many ways)

Gimp: Get the stock > Duplicate it > Colors > Desaturate > OK > Erase the parts that you want colored.
