Because they find it ironic that a woman who has the combined stereotypical un-attractiveness of being fat AND black is so confident and self assured of her appearance. They don't see why someone with those traits would be so confident. No one else sees her as attractive, so why does she see herself that way?

The "confident fat black woman" is considered a joke and alot of people aren't even aware of it. They just think its funny and they never examined why they find it funny
