Is this too much for Coby to handle or is he totally capable of taking out two of the most notorious Pirates in OP?

Luffy is a versatile fighter but his Observation is not on the same level as Coby, and he is too reckless in his fights. Sabo, on the other hand, is a much more strategic fighter, but still relies much on his Mera abilities and lacks much of other things.
I honestly see Coby taking this Ultra-high difficulty.

Sabo relies too much on a fruit he got at most months ago? Ok. Coby couldn't beat Luffy or Sabo 1v1 let alone 2v1

I think Coby could win if he's fighting them 1 by 1. just gotta go into with the mindset that it really doesn't matter that he was a scrub before the timeskip, because, retrospectively, everyone was. it looks like garp was battling the rocks before he was even in his 20's. All that says to me is that it's possible much of garp's strength was gained in short period of time, and that garp's strength then could be projected onto coby because garp's strength(haki) can be taught.

Imo, current coby may be capable of mid or low diffing the Luffy we saw at Dressrosa and high-diffing Sabo, so I can agree.

You're crazy. A. You're either ignoring or forgetting Luffy has a much higher growth rate than Coby. Any growth Coby's gained Luffy's matched or more realistically exceeded. B. Luffy was already several levels above Coby ever since the beginning. For Coby to surpass Luffy he'd have to grow at a rate that far far far exceeds Luffy. C. Coby was roflstomped both times they fought again, 1st time dodging a punch then being taken down and being 1 punch O'd at MF.

Coby's growth rate is an unknown. Because of that, all of Coby's achievements are likely to be what Oda feels are fitting for a student of Garp. For me, that's smashing Dressrosa Luffy at the bare minimum. Coby's growth rate doesn't actually have to be higher than Luffy's own for him to be stronger than Dressrosa Luffy, because Dressrosa Luffy is quite far in the past. Luffy's growth rate is so high that he could probably thrash on Dressrosa Luffy too now. Even Sanji and Zoro will get to that point over the course of like a week or two in Wano DESPITE that being the result of Luffy's growth over 2 years. Luffy's growth rate is wholly plot & everyone else gets placed where they need to be even if it contradicts Luffy's growth.

The same is true for Coby, so Coby's growth wouldn't have to be faster either. Their pre-timeskip strength hardly matters because none of them were particularly strong at that point. Marineford Luffy could solo literal hundreds of Start of Story Luffies, and that's after some weeks of progress. A weak character does not grow in increments, but drastically, so starting points don't matter.

Sabo without MMnM has manhandled a Seat, Vice Admiral and Commander. With it he was faced against Admirals. Luffy has defeated 3 Commanders and faced 1 Admiral and 2 Emperors. Bastille (VA) was dispatched to capture Cavendish. Barto off-paneled Maynard (VA). Both of these Allied Commanders were scaled around the Seats. Of which Kyros fought and defeated one -- Koby highlighted the strength. You're not even trying with these troll threads.
