So why don't ninja just use Genjutsu against him? He can't block it and wouldn't be able to get out of it, right?

See that's what I thought but where does in the manga has that been stated?

The Eight inner gates, are a way to get your chakra flow flowing harder, giving a certain second of interruption. So you will be able to stop the chakra flow for a while and get out of the Genjutsu.

Not too many people that Lee has fought use genjutsu. Also, I'm sure that Guy taught him at least something about combatting genjutsu users.
