But if Edo Tensei is basically a soul that's summoned into another person's body, doesn't that mean that the body got destroyed? How did they regenerate without a body?

Think it's Kabuto's doing. Remember he drugged the Edo Tensei technique. So I think this is one of the side-effects of the jutsu.

In other words, he made the jutsu beyond of what Orochimaru and the creator did.
