ok so im watching one piece for the first time and am currently on episode 100 but a few episodes back when they landed on the snowy island where they picked up the reindeer doctor. I was under the understanding that only one person could utilize a devil fruits power at the same time, but the old kings guard and reindeer seemed to have the same ability and that is animal shape shifting they both have three forms. was the doctor originally a reindeer then ate the fruit or was he a human first? idk if I walked away from the computer when they explained it but to me it seemed they ate the same fruit. any insight on this or did they eat different fruits that are just similar in ability. and if anyone has like a list or chart of all devil fruits id appreciate it

The doctor was originally a reindeer and the guard was originally a human, the doctor ate the human human fruit and the guard ate the animal animal fruit. Both human human and animal animal have different type of models in which they can transform and are considered to be the Zoan class fruits.
For example
Animal Zoan model Girrafe is a different fruit from animal Zoan model lion
same goes for human Zoan models.

There's a lot of fruits in all varieties. According to the wiki, there's 77 known Canon devil fruits, plus 22 non canon ones, although Paramencia's are the most common and Logia's are the rarest.
Not neccessary only for animals.
There are different types of human modeled fruits like the buddha model was eaten by a human which on latter in the anime while be shown dont wanna spoil by telling you who has that.

Nah the other dude had a different fruit that allowed him to transform into an animal, chopper on the other hand also had zoan but it gave him the ability to transform into human, but it's technically still a zoan.
A zoan DF would allow a person to transform into any type of creature, not just animals as some assume.
Later in the story, you will see a character named "sengoku" that also has another human human fruit but with a different model called "Daibutsu "

yes he is , if you know who crocodile is , he is a logia , paramecia are those guys that can use their powers , but cant transform nor cant be intangible , like crocodile or ace , or smoker , a zoan fruit , is like those 2 persons from that snowy arc.

The doctor (Chopper) was originally a reindeer and he ate the Human Human Fruit which allowed him to talk and behave like humans. The king's guard was a human who ate the Ox Ox Fruit which gave him animals abilities. Both are Zoan type devil fruits.

Oda has said that he wanted to give the MC (Luffy) a kind of crappy ability that could become strong. Of course, it's a shounen, so Luffy is going to be stronger than even the strongest DF users. It's just how things go. lol

Gum Gum Fruit isn't anything special. Oda designed it so that Luffy could have unique powers without being naturally Overpowered.

Watch them closely chopper turn from reindeer to reindeer human by eating Human Human fruit.But king guard ate animal type fruit which make them turn into animals.There is a difference as in case of chopper reindeer acquire human characters.King guard human acquire animal characteristics.DF concept will be more clear when you go ahead with the series.
