I still believe that Itachi's stamina in the databook doesn't have anything to do with his sickness. Because, in Part 1, he retreated after 2 Tsukuyomi and 1 Amaterasu. Kisame had also warned him from using his eye too much.

Even his brother Sasuke has relatively low stamina, remember his Kage Summit fight.
