How do I get such a Profile setup ?

Yes, that's only for the other people. The only thing you can hide is vm's. In general settings

There is no None option there. Right now my contacts can see everything.

there's drop down menu and it has both friends and contacts, altho I don't know what the difference is

Friends and Contacts are the same. This would mean that my Friends can see everything.

I wonder if a Nothing option can be present where everything is visible only to you.

you have to remove everyone from your friend list, so only you can see it

The rest you have to leave all the options blank for color and stuff to look that clean like sublime.

I can vouch for this as I have an empty friends list. It's the only way to keep your profile looking like that for everyone else.
