No, sage mode, Minato will is stronger than Itachi's. That's what truly defeats a person genjutsu wise, and since time goes by a sec in that world or w/e sage mode will be gathered faster.

he can't enter sage mode instantly he doesn't have a fox or shadow clones gathering nature energy for him. itachi won't die from using amateratsu once

Actually, Minato is a behemoth in terms of chakra reserves, you can see that during the Nine Tails invasion. He used FTG many times, teleported a TBB and the Kyuubi, and sealed it as well.
