u can seal jubi and bijus it's different

we have different sealing weapons and jutsus (totsuka blade for example)

Well that's what he did. He divided the chakra of the Bijuu and sealed the Juubi in the moon and his sealing jutsu was passed down to seal the Bijuu in people. I don't think there's an absolute seal that would prevent them from appearing again for all eternity (at least not yet). I mean even the RDS was broken by Orochimaru.

Without the bijuu, there cant be anything, the Juubi is the progenitor and the SOURCE OF ALL CHAKRA thus all things came from it and without the JUUBI there would be no source to sustain the things in this world thus everything will cease to exist

Thats why rikudo did not kill it. it cant be killed. Sasuke dont have much knowledge on bijuus except for when he is with naruto and that time he joined akatsuki tobi tells him about the bijuus as chakra personification

why ruin him ? it will show us how great he was , and his story is important to know more about the rinnegan origins and doujutsu too

but I do want to do some justice to the development of the characters involved with the sage..

He will be shown (mostly chakra form) because he holds some of incomplete puzzle pieces that can explain the existence of the Juubi and the whole story behind it.

not completely , but it is releated by default.. Fuu and the other jinchuriki have fans and those fans would have probably liked to see these characters in action, more action than they were shown.. like a full blown fight.. it could have been a hunt for the jinchuriki arc or something. I would have liked to see more than Naru,Gaara,Bee in action amongst the tailed beasts bearers.. Could have shown Jinchuriki trying to capture other jinchuriki to free them from their villages and being used like tools.. more of their personality or anything to make them seem like real characters rather than a bonus character in a video game. It wouldn't have compromised the story one bit.. It would have added something to it.

He must of had a good reason for this... But what would that reason be????
