I have read pretty far into Fairytail and this is what I can say

It has little to no plot holes but the same can be said about the plot in total

Fairy Tail probably isn't on my top 3/5 but I do like special scenes in particular like Midnight's showing and Laxus's departure. I'm not too far into FT btyw

There is kind of a plot. Natsu is trying to find Igneel and defeat Zeref.

what's the plot of naruto? naruto wants to be hokage. that sums it up, right? the beauty of manga is that it's not a single movie with a clear plot and resolution. it's an evolving plot. lucy and natsu want to be S-Class Mages of Fairy Tail. Lucy wants closure with her father. Natsu wants closure with his dragon father. Who is Zeref, and what is his connection to Natsu? Can Fairy Tail become the strongest mage guild in the world? Will Lucy collect all the Zodiac Celestial keys? There are so many.

The plot is the guild; members have their different journeys, like Natsu,Gajeel,& Wendy finding their dragons or Lucy's development as a celestial spirit mage, but the adventures & well-being of Fairy Tail is the underlying thread of the entire series. Everyone will live & die for their nakama, even gaining extra strength & power from that bond.
I guess Fairy Tail also is the main guild combating the threat & minions of Zeref, so that could also be a main plot line.
