Orochimaru could have easily taken sasukes sharingan in part 1, and could probably have taken kakashis eye.
Orochimaru was never after the sharingan itself, but a uchiha body. With the uchiha body he could unlock the full power of the sharingan. Only uchihas can use the sharingan more effortlessly. Ultimately getting the greatest use possible.
That said, I am on the fence about who this sharingan user is. It is possible it could be a side branch of uchiha, similar to how the uzumaki were to the senju.

I can agree with this the uzumaki were superior overall to the senju and Naruto was Uzumaki and Senju

You are right, but this isn't limited to just that. He was indeed after Sasuke's body and not only the Sharingan, as his motives implied. The reason why Orochimaru insisted on training Sasuke was to obtain his body, not because he was specifically aiming for the Uchiha body, but because he saw it as a complete package. A new Uchiha body with the Sharingan. But his main target was only the Sharingan.
He needed the Sharingan because he was obsessed with it (his main goal), but he needed a body replacement as well since his own body was weak and diminishing in power. And because he needed both of those, he saw his perfect opportunity with Sasuke. Obtaining Sasuke's body wasn't his priority since he could have used the Sharingan on his regular body as well without side effects, using Hashirama's cells, just like Danzo. But he couldn't because his body didn't allow it. If he had a healthy body, he could have opted for just the Sharingan (because that was his specific requirement). But his weak body tempted him to wait for Sasuke's body to grow powerful enough to take over. And that's why he didn't just take away Sasuke's or Kakashi's Sharingan in Part 1 because it would be useless with his own feeble body. Adding Hashirama's cells would be dangerous since his body wouldn't be able to hold up against the power, just like what happened with Danzo.
PS: He couldn't have taken just any healthy body since Hashirama's cells could be added to only a body strong enough to handle it (if the body wasn't already an Uchiha body). Danzo was a Kage level shinobi who could handle that. Orochimaru's own body couldn't handle that impact of Hashirama's cells, and if he aimed for any other strong body, it wouldn't be that easy to acquire since he couldn't fight someone strong enough due to his weakness. So that's why Sasuke's body was his only option and it was a complete package. It wasn't the only option, but it was the only option under his circumstances.
