This battle didn't officially happen 1 on 1 yet. What I mean is, Kakashi and Zabuza never faced off alone the first time they met. They faced off 1 on 1 the second time after analyzing each other's abilities; something they wouldn't be able to do their first battle.
Kakashi only won the second battle because he summoned his Ninken to smell out Zabuza. His Ninken were able to smell out Zabuza because Kakashi allowed himself to get cut to get his blood on Zabuza's Kubikiribocho.
Remember the first battle when Zabuza used Water Clones first to attack? He didn't use them against Kakashi 1 on 1 the second battle. This is because Kakashi told him, "The same technique doesn't work on me twice". Zabuza, knowing that, didn't even try to use them the second time against Kakashi.
The first time Zabuza used the Water Clones, regardless if Team 7 was there or not, worked. Many people say if Team 7 wasn't there, Kakashi would have never gotten distracted and gotten caught in the Water Prison Jutsu. This possibly being true, we saw when Kakashi and Zabuza faced off one on one, what Kakashi would have done (which is using his Ninken).
As I was saying about the Water Clones, Zabuza didn't use them against Kakashi one on one due to Kakashi noting they wouldn't work on him again. Kakashi's plan to beat Zabuza was letting himself get cut to get blood on the real Zabuza's weapon to smell him out right? If they fought for the first time (being the first time they met) one on one, Zabuza would have used Water Clones against Kakashi.
What would happen if Zabuza made a Water Clone? Kakashi, not being able to tell the difference between the real Zabuza and a Water Clone (not one of the Sharingan's powers), would allow the Water Clone to cut him! Thus, the blood of Kakashi will be on the fake Kubikiribochi. This means that the Ninken would smell out the Water Clone and hold the Water Clone down!
When the Ninken smell out the fake, Water Clone Zabuza, Kakashi will move in with his Lightning Cutter to kill Zabuza. But as Kakashi will find out, it'll actually be a Water Clone! This will give Zabuza the chance to move behind Kakashi with an opening. And just how he did this before, he will swing his sword, forcing Kakashi to duck to avoid it, then kick Kakashi into the water and capture him in his Water Prison.
At that point when Kakashi's caught in his Water Prison, the battle's over, as Kakashi already said this before when he got caught.
This is a very complicated battle that requires you to think through it clearly. If you have read through my whole argument, you will understand what I'm trying to say.
Basically, Water Clones are a counter to Kakashi's Ninken plan and if they fought for the first time, Zabuza would have used them, countered Kakashi's plan, and killed Kakashi.
