I couldn't find the other post so I'll just reply to this one.

I doubt it was on purpose eyes just don't change without reason.
Just take the Sharingon whenever it's looks change it is because it's either becoming more powerful or using a unique ability.

It was a screw up by the animators. They accidentally put in the wrong colors until Kishi corrected them.
