I heard roshi (jinchuriki of son goku) put up a good fight. We never saw it though. I am gonna go with gaara and yugito.

Han looks the most bad ass so him roshi and gaara

1) Utakata - put up a good fight against Pein (the supposed leader of Akatsuki).
2) Roshi put up a good fight against Kisame (the best at capturing Jinchuuriki).
3) Gaara - put up a good fight against Deidara.
4) Yugito - seems like she didn't put up much of good fight, but i'll give her credit since she went against 2 Akatsuki members at the same time unlike the others.

Han and Fuu were fodderized to the point they were only introduced as zombies during the war and never got referenced before, therefore i won't list them given the fact that they probably didn't put up a good fight.
