The Shimura were only special for their wind-style, they ended up just becoming fodder for the story-line.

This. We needed to see something, at least around the time of Danzo vs Sasuke or when we got the founding of the leaf flashback.

Apart form the uzumaki clan and uchiha clan and the Hyūga Clan what other clans should the manga have explored more of and give more of a backstory to.

The Nara and Akimichi clan perhaps.

If I recall correctly, their clans are intimately connected by their roots which was the cornerstone of Choji and Shikamaru's friendship, so their clan's backgrounds should've been expanded more.
