Mei can use Lava style, and Vapor (or something similar, what ever you want)...And she says she has 2 kekkei genkai's...how does that work? Does she have the DNA of two persons who could use both Vapor and Lava style?

It is Lava and Boil and Yes it has been explained in the series, Part 1, that Kekkei Genkai means Bloodline Limit, emphasis on the word Bloodline. It is something that you must have the genes to do, otherwise it would be simple to just copy it with the 3T sharingan, it is the main reason why Kakashi stated he cannot copy a Kekkei Genkai
