Actually it seems like it might only cover 587, but the next episode should then cover 3 chapters (588/589/590)

This is only an assumption. Actually, the next 3 Manga Chapters are going to cover the next 3 episodes (Edo Tensei Release Chapter 589 - Episdoe 340 The Reanimation Jutsu's Release) meaning that each episode will only cover 1 chapter, thus meaning that half of the episode will be filler. Basically, we'll get 1,5 episodes of filler in the next 3 episodes, at least.

Actually, the next 3 Manga Chapters are going to cover the next 3 episodes (Edo Tensei Release Chapter 589 - Episdoe 340 The Reanimation Jutsu's Release) meaning that each episode will only cover 1 chapter, thus meaning that half of the episode will be filler. Basically, we'll get 1,5 episodes of filler in the next 3 episodes, at least.

Nope, episode 340 is covering chapter 591. The title being similar to 589 is just a coincidence.

339= chapter 588-590
340= chapter 591-592

Episode 338 had half and I think 340 is also gonna be filler half since, if we look up on the preview for the 339th episode, we can see that Edo Tensei was already over with since Itachi tells Sasuke his last words. If that happens already in the 339th episode, I can't see what else about the release of Edo Tensei might happen in the 340th one.

In the Manga, the "I'll Love You Forever" chapter comes AFTER the "Edo Tensei Release" one, so I can guess that the chapter about "Edo Tensei Release" is also included in the next episode, since we already have seen parts of the "I'll Love You Forever" chapter. Either this, or they swapped them somehow.

340's title is referring to chaoter 591, where Madara says "Release" at the end to free himself.
