We already know The Sage had that appearance before his fight with the Juubi, not after he became the Juubi's jin.

So just why does Obito resemble the Sage after absorbing the Juubi? It makes no sense.

I theorize that a fragment of the sage was left with the juubi and it's the juubi's subconscious that forced this form; much like Naruto's bijuu cloak

When the sage created the bijuu, he used his own power along with the juubi's, meaning the bijuu are a part of him

and now all those bijuu that possessed part of his power have merged together to create the juubi
