I don't get it, why would Obito start the war and turn the entire world against him? Why not try and turn the nations against each other or take them out individually?

He could have just taken Ginkaku / Kinkaku's chakra somehow, revived the juubi somewhere far away enough for nobody to notice too soon and cast infinite Tsukuyomi in all safety, problem solved. 0 resistance, no losses.

But turning all 5 nations against him is like trying to get things done in the highest possible difficulty. Do you think this is plot no jutsu or does it have a reason?

Obito is as we know always rushing things, he is just as he was from the very beginning. He never really thought about his actions very well. He just tried to rush on Konohas first attack to get kyuubi, so he had the strongest beast first of all. His mistake was to try destroy Konoha at the same time. Well he just wants to rush, if he thinks he can do it. The war was not a brilliant idea~ U can say he is an Idiot, with just to much information & Power. He just can not use this properly, so it fits perfectly into kishis plot.

Good point, However "Ginkaku / Kinkaku's" thing was'nt expected (remember the edo tensie matter), Therefore he had to start up this whole war in order to capture the kyubi regarding he already had the 8th chackra.. so "Ginkaku / Kinkaku's" was a Joker!?!

Easier said than done because of the actions of Akatski the 5 Villages were already trying to make peace even before they knew Tobi, plus aside from the Kages each village pretty much has only 1-2 Shinobi that aren't Fodder, the Leaf had Several Kishi would have had to make 20 new Characters to make it a fair fight.
