He car remain intangible for 5 continuous minutes. He could go for short duration or for the whole of 5 minutes. He can simply resume his intangibility and its time after he has gone tangible for a brief period of time. Nothing in Itachi's arsenal enables him to attack Obito for 5 straight minutes.
Also how exactly Itachi would know that Obito is tangible? We've seen how masterfully Obito tricks his opponents with Kamui.

Itachi was canonically a battle smart and had the wisdom of a Hokage at seven years old. If Minato and Konan figured out that, why Itachi can't? He was also an Akatsuki member, which increases the chances of Itachi knowing this before.

I have it in OP. Itachi knew Sasuke could counter it. So can Obito.

Itachi lacks the technique to counter kamui. He doesn't have Minato's speed, nor Konan's 5oo billion explosive tags.

Do you know what happens when Obito teleports someone he sends to his dimension? The said person is there not defeated. Obito has to go back and kill or defeat the said person there, so that they won't trouble him later on. Obito knows he can't best Itachi in the dimension because of kamui not working there. He also knows it'll be a long shot to leave Itachi there to die of starvation or dehydration without Itachi doing some sort of damage. Obito knows his best option is to kill Itachi outside of Kamui dimension.
