Kakashi does not need the sharingan to out smart a Uchiha. His vast knowledge of the sharingan is enough to make him a strong contender. Danzo soloed Shuisue without the sharingan.

As for your other part. Fanboy logic does not work here. If you think Itachi is truly unbeatable than don't put him in verse battles. Cause others won't fall for that daily wank.
