I think in-spite of being strong clan Hyuga was not involved in war with other clans so it was not mentioned. Since Hyuga is peace loving clan IMO.

Plus sarutobi and shimura clans were at war so they were mentioned for making peace between them

The hyuugas are weak to me. Only neji his dad and uncle are strong IMO. Everyone else is fodder.

Lee and Gai are best taijutsu users I agree. But hyuuga clan is a clan gifted with Byakugan. Kishi could have mentioned them. They are famous .I meant about huyuuga.
