Cowboy Bebop, definitely. 26 episodes, lots of John Woo inspired fights, and the greatest ending ever. A couple others:

- Samurai Champloo (26; best swordfights ever)
- Trigun (26; awesome gunfights and amazing final battle)
- Black Lagoon (24 + 5 episode OVA; lots of great gunfights, not a solid ending, though)
- FLCL (6; just nonstop adrenaline)

not many anime have a "perfect" ending.. particularly the short ones. Samuri champloo and Getbackers is one of the better ones for that and the only ones i can think of at the top of my head.
