Ouran Host Club is pretty good
I have heard good things about Soul Eater and Berserk
I only completely watched Gundam Seed and Gundam G (best IMO)
Fate Series is a little boring until you get to Fate Zero (awesome and its a prequel so you might wanna watch it first)
Black Butler is really popular from what i have heard

watch Fate/Zero first and wait for Fate/Stay night (2014) which is being made by ufotable, one of the best anime studios. It's a reboot. It will be out in...maybe...October this year.
Don't watch Fate/Stay night 2006 version, it's so terrible because of its sh!tty animation.
