It's not a plot hole. After all, Edo's are reincarnated into real human bodies, which still have blood. The body's blood is just changed to match the Edo's.

I think it's when they're about to be really "killed" then they turn into paper.

When they're just doing their own techniques etc, they can bleed.

But then when they're cut why doesn't blood come out of the body they're using?
