Maybe his pupils? I noticed some times they make the pupils big to show a certain emotion

Eye color, especially with blue eyes, depends on the ambient lighting. Blue eyes are not blue because they have blue pigment. There is no pigment that makes eyes blue, they're blue because of lack of pigment. The only difference between blue and eyes of any other color is that blue has no melanin, and the other colors have different degrees of melanin to create the different shades. They're blue because of the way light interacts with the iris. The very same process that makes the sky blue is what makes eyes look blue. If there isn't very much light then they just end up looking sort of grey.

Actually, everything starts looking sort of muted when there is less light. Part of the cause of this is neurological, our brain can't process color if there isn't enough color information coming in. You become sort of color blind. Try to perceive color in a dark room sometime.

The color people understand all of these things, look how mute all of the colors are. This war is taking place at night.

Colors don't always have to be literal, when you're telling a narrative you can also manipulate them for different emotional effect as well.
