Evasion is an option, futon from Fukasaku/Shima or katom from Shima is also an option to intercept it, Shima can use dust cloud and remove Katsuyu's ability to see them thus eliminating it as a threat altogether.

I've yet to see wind blowing anything back except people, Katon meeting acid I doubt it. Dust would just give Katsyu a larger surface area the moment dust is there the acid hits and settles everywhere. Water techs could possibly match it and dilute it but they'd need to be Kisame scale.

Only problem with fighting Katsuyu is she doesn't die. But the point here is Fukasaku and Shima are more useful in combat than Katsuyu.

Katsyu actually affords more benefits, she can restore chakra, give you a katsyu cover like she did against pain's Shinra Tensei and can heal you. It couldn't even be harmed by a 7 tails transformation. I suppose for jutsu combos though the toad sage's are more valuable.
