As for him not trying to kill sasuke I dnt use tht excuse why because itachi did not have prior knowledge that oro was inside sasuke and he still hit sasuke with Amatratsu .... Without tht Jutsu tht sasuke used (because orochimaru) at tht point sasuke had no counter to Amatratsu
Don't forget that it was itachi who made sasuke seek more power, he knew sasuke had the curse mark, & he also knew that orochimaru was after sasuke's eyes. Itachi expected sasuke to have some way to avoid it, since he was training under oro who has his own way. If sasuke wasn't at least stronger or as strong as oro at that point then he wouldn't have come to fight itachi in the first place.
You could say that itachi trusted his judgement regarding sasuke's abilities, & since his perception & reasoning was on a level of a hokage's, most likely even greater since he's older. [

Since he was perceptive, he could've noticed sasuke's snakes which were used when he activated the CM, any little thing could have given him an idea of his ability.
Also u do not know wether itachi was wasting chakra or not I get it he planned his whole death battle against sasuke but it still doesn't change fact tht sasuke was outrunning Amatratsu because he was not constantly in itachis line of vision
I believe he wasting chakra because it was pretty evident through his mangekyou usage which was pretty inefficient. For example:
Tsukuyomi was activated for way longer than necessary, & he was using it to slowly remove sasuke's eyes one by one. It was more of a psychological mind game & it could have ended at any moment. He gave sasuke the opportunity to escape tsukuyomi, but under normal circumstances he could've ended up like kakashi.
I already talked about how itachi used ama more than necessary, so ill cover susanoo.
First & foremost he pulled out his complete susanoo for no reason & on minuscule level attacks. [

Next is how itachi approached sasuke, he
walked all the way to his spot while maintaining most of his susanoo for as long as possible which was again unnecessary. [

] He could have kept up a simple ribcage + hand.
Finally is how he died, sasuke went blind due to overuse of his MS, itachi achieved the same level of blindness, but he still held up susanoo, & on at least a V3 level or above. This tells me that itachi was using his susanoo for far longer than was needed.

Yeah that's mainly the reason why I see ama being quite deadly even for people who can counter it in some way. It's hard to make it a non-factor.
As for onooki and mu speeds granted they r fast already but not at v2 levels but can't blth of them each do the weight thing to make them selves close to v2 level I mean onooki did it to Ay and it greatly increased his speed way above v2
Well I'm not 100% on the weight lifting jutsu but it would have to at least be faster than V1 speed because sasuke was able to keep up with that quite fine.
Also who said onooki will be stationary if he is on golem he can do what he did similar to Ay
Well this is assuming he tries to block it, which is a bad idea. If he has a golem between himself & itachi then he won't know when the attack is coming, it would put him in an awkward spot.
About tht Amatratsu burning straight hole inside the golem we both know it won't do tht right away it took a long time to burn through samurai armor (not long but some time)
Ama burns faster & more area when the user is focusing on the target, take the sasuke example in your OP, he burnt the forest around him & sasuke to a crisp but when he stopped it didn't spread at all or at least really slowly.

], itachi focused on the wall & burnt it down near instantly, judging by jiraiya's reaction & the jutsu's portrayal katon shouldn't be able to scorch the toads flesh that quickly or at all.
We both know golem is Doton and doton>katon not saying tht amratrasu is normal katon cuz it isn't
But it will tak time to burn through the golem and onooki has shown to have multiple golems as well and Mu can give him some

It may take slightly longer but if the user is focusing then that time greatly increases. Katon should = katon but ama burnt it down quite quickly.
If Amatratsu is on golem the Kage duo can use tht against kisame seeing as he can't absorb it cuz sameheada hates katon
