Although I would say, with certainty, that Itachi is a more well rounded shinobi.

No, I doubt that it can pierce Susano'o. For one, the sword was never described as being omnipotent or all powerful - all that was said was that anything which it managed to pierce would be sealed into its Genjutsu. Not that it could pierce and seal everything. It's a spiritual weapon, but it needs to turn physical to pierce its target. We saw it physically chop off the hydra's heads [

]. So I wouldn't back the logic of those saying; "Oh, it pierced Oro so it can pierce something as sturdy as Susano'o", since the blade lacks grand piercing feats.

and as to your second point what if he pierced through susanoo and hit sasuke

Yeah, it lacks a physical form when it's not being used, hence why it disappears (along with Susano'o) when not in use; it's spiritual. Though it clearly needs to turn physical in order to pierce - otherwise, Orochimaru wouldn't have bled when it went through him.

Yet I haven't seen the blade pierce through anything as complete as Susano'o. So I have no reason to assume that it can.

Itachi is a better ninja but I think EMS has made Sasuke surpass his brother. Itachi's MS can't outla Gst an EMS user, plus Sasuke's chakra is better than Itachi's. Tsukuyomi doesn't work on Sasuke either.
