And sat if you had access to ONE and Only One stone to use it for yourself, which one would it be?

Mind Stone, Soul Stone, Power Stone, Space Stone, Time Stone, and Reality Stone.

If we are talking mainly movies, there was a report saying that the soul stone that has yet to be officially introduced, is the most "dangerous" of them all.

Personally I would want the mind stone cus that would give me telepathy, but I don't really know exactly how they all work, but that seems the most intriguing to me.
